Here’s a traditional Turkish Sultan Lokumu (Turkish Delight Rolls) recipe. This soft, creamy dessert is easy to make and has a delicate coconut coating with a creamy, custard-like filling. It’s perfect for tea time or a special treat!
Ingredients
Base
1 liter (4 cups) milk
1 cup granulated sugar
1 cup all-purpose flour
1 tablespoon butter
1 teaspoon vanilla extract
1 cup shredded coconut (for coating)
Filling
1 cup whipped cream (or thick cream)
Optional: crushed pistachios or hazelnuts
Instructions
- Prepare the Base:
In a large saucepan, mix the milk, sugar, and flour. Whisk until smooth and no lumps remain.
Cook over medium heat, stirring continuously until it thickens (about 10-15 minutes). The mixture should resemble a thick pudding.
Once thickened, add the butter and vanilla extract. Stir until the butter is melted and fully incorporated.
Remove from heat and let the mixture cool slightly.
- Spread and Set:
Sprinkle shredded coconut evenly over a large, flat tray.
Pour the custard-like mixture over the coconut layer, spreading it evenly with a spatula to about ½-inch thickness.
Let it cool to room temperature, then refrigerate for 1-2 hours or until firm.
- Add the Filling:
Once the base has set, spread the whipped cream evenly over it.
If desired, sprinkle crushed pistachios or hazelnuts on top of the whipped cream.
- Roll and Slice:
Using a sharp knife, cut the mixture into rectangular strips (about 1.5 inches wide).
Carefully roll each strip from one end to form a roll.
Place the rolls on a serving plate and refrigerate for another hour to help them hold shape.
- Serve:
Serve chilled and enjoy! These are best eaten within a day or two for optimal freshness.
Tips
You can vary the filling with different types of nuts or even add a hint of rosewater to the custard base for a more traditional flavor.
For an extra touch, drizzle chocolate or dust powdered sugar on top before serving.
